Mexi-Chicken Casserole

Super Pollo


– 1 large onion, chopped
– 1 tbsp vegetable oil
– 3 medium tomatoes. peeled and chopped
– 2 cups chopped cooked chicken
– 1/2 cup chicken broth
– 2 tsp chili powder
– 1 tsp salt
– 1 tsp ground cumin
– 1 tsp dried oregano
– 6 corn tortillas, cut into fourths and divided
– 1 cup shredded sharp Cheddar cheese, divided


Cook onion in oil in a Dutch oven over medium-high heat, stirring constantly, until tender; add tomato and next 6 ingredients. Bring to a boil; reduce heat, and simmer 5 minutes. Layer half of each chicken mixture, tortillas, cheese in a lightly greased baking dish. Repeat procedure with remaining chicken mixture and tortillas. Cover and bake at 350 for 25 minutes. Uncover and sprinkle evenly with remaining 1/2 cup cheese, and bake an additional 5 minutes.
